My Example: Malai Gulab Jamun with Milk Powder ✨🍮

I’ll share a personal example. I was experimenting with milk powder-based Gulab Jamun, but every recipe I tried felt slightly incomplete. That’s when I turned to Reddit.

Here’s the recipe I perfected:


📝 Ingredients:

  • Milk powder – 1 cup (use full-fat; I used Nido Fortified Grow)
  • Baking powder – 1 tsp
  • Cream – 1 tbsp
  • Cardamom powder – ¼ tsp
  • All-purpose flour – 1 tsp
  • Semolina – 1 tbsp
  • Desi ghee – 2 tbsp
  • Egg – as needed (I used about 2 tbsp; add gradually)

For the Sugar Syrup:

  • Water – 1 ½ cups
  • Sugar – 1 ½ cups
  • Lemon juice – 1 tsp
  • Yellow food color – a pinch

👩‍🍳 Method:

  1. Mix milk powder, baking powder, cream, cardamom, flour, semolina, ghee, and egg (little by little) to form a soft, smooth dough.
  2. Shape into small balls (they’ll double in size when cooked).
  3. Fry on low flame until golden brown, making sure they cook evenly inside.
  4. Prepare the syrup by boiling water, sugar, lemon juice, and a pinch of food color. Keep hot.
  5. Add the fried gulab jamuns to the syrup, cover, and cook on low for 2–3 minutes.
  6. Let them soak until soft and juicy.

 Notes:

✔ Don’t add the whole egg at once—add just enough to bind.
✔ Full-fat milk powder makes them extra soft and rich.
✔ Frying on low flame is the secret to avoid raw centers.

The result? Bakery-style Malai Gulab Jamuns that are soft, spongy, and completely soaked in syrup.
